Cider Beef Stew Taste of Home

3 TBS flour
1 tsp salt
1/2 tsp pepper
1 pound beef stew meat, cut into 1 inch pieces
2 TBS vegetable oil
1 cup apple cider
1/2 cup water
1 TBS vinegar
1/2 tsp dried thyme
2 large carrots, cut into 1 inch pieces
1 celery rib, cut into 1 inch pieces
1 large potato, pealed and cubed
1 medium onion sliced.
In a bowl combine flour, S&P, and beef and toss to coat. In pan brown meat in oil. Add cider, water, vinegar, and thyme and bring to boil. Reduce heat, cover and simmer for 1 hour and 45 minutes. Add vegetables and cover and simmer until soft (45 minutes) 4 servings

The apple cider really adds to the flavor!
